Ingredients (view qty in metric system instead)
1/2 cup finely chopped onion 1 tbsp. minced fresh garlic 3 tbsp. butter 1/2 cup prepared barbecue sauce 1/4 cup water 1/8 tsp. tabasco sauce or to taste 2 pounds skinned catfish fillets
Directions
Combine onion, garlic and butter in a medium saucepan. Cook over medium heat, stirring occasionally, until tender. Add barbecue sauce, water and tabasco. Simmer 10 minutes, stirring frequently. Place catfish fillets in a shallow baking dish and pour sauce over. Cover and refrigerate 30 minutes, turning fillets over every 10 minutes. Meanwhile, prepare barbecue grill. Arrange catfish fillets in a well greased, hinged wire grill holder. Grill fillets 3 to 4 inches above heat about 4 minutes per side until fish flakes easily, basting frequently with sauce.
Serves 4.
