Ingredients (view qty in metric system instead)
2 cups cooked, chopped chicken 1/2 cup chopped onion one 4 ounce can chopped green chilies, drained 2 cups shredded Monterey Jack cheese one 12 ounce can Mexican-style corn, drained 1 cup dry baking mix 1 cup milk 1/2 tsp. salt 3 large eggs, separated
Directions
Preheat oven to 350 degrees. Grease an 11x7 inch baking dish. Layer chicken, onion, chilies, cheese and corn in dish. Beat together baking mix, milk, salt and egg yolks in a medium bowl until blended. In a separate bowl, beat egg whites until stiff but not dry. Fold beaten whites into yolk mixture. Pour over corn. Bake about 35 minutes until a knife poked into casserole comes out clean. Cool slightly before serving.
Serves 8.
