Taco Bell Mexican Pizza Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
8 ounces ground beef
2 tbsp. all purpose flour
1 1/2 tsp. chili powder
3/4 tsp. salt
1/4 tsp. dried minced onion
1/4 tsp. paprika
dash garlic powder
2 tbsp. water
1 cup solid vegetable shortening
eight, 6 inch flour tortillas
16 ounce can refried beans, heated
2/3 cup mild picante sauce
1/2 cup shredded Cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/3 cup diced tomatoes
1/4 cup chopped green onions


Directions
Preheat oven to 400 degrees. Combine ground beef, flour, chili powder, salt, minced onion, paprika and garlic powder in a medium bowl. Blend with your hands until well mixed. Heat a large skillet over medium high heat. Add ground beef mixture and water to skillet. Cook 5 to 6 minutes, breaking up meat with a spoon, until well browned. Meanwhile, heat shortening to 350 degrees in another large skillet over medium high heat. Fry one tortilla at a time, 30 to 45 second per side, until golden brown. Drain tortillas on paper towels.

To Assemble Pizzas:
Spread 1/3 cup warm refried beans over the top of 4 tortillas. Spoon 1/4 to 1/3 cup of the beef mixture over the top of the beans on each tortilla. Top each with another tortilla. Spread 2 tbsp. picante sauce over the top of each tortilla. Mix together Cheddar and Monterey Jack in a small bowl. Sprinkle cheese mixture over picante sauce. Sprinkle with tomatoes and green onions. Place pizzas on a sheet pan. Bake 8 to 12 minutes until cheese is melted. Cut each pizza into 4 pieces and serve.

Makes 4 pizzas.
