Ingredients (view qty in metric system instead)
16 ounces dried pinto beans, picked through 5 cups water plus additional for soaking 1 large onion, peeled and chopped 6 cloves garlic, chopped 1 bay leaf 3/4 cup ketchup 6 tbsp. brown sugar 5 tbsp. prepared mustard 2 tbsp. chili powder 2 tbsp. worcestershire sauce 1 tbsp. paprika 2 1/2 tsp. tabasco sauce 1 1/2 tsp. dried thyme 1/2 tsp. salt 1/2 tsp. pepper
Directions
Combine beans and water to cover in a large pot. Let beans soak overnight. Drain beans and return to pot. Add 5 cups water, onion, garlic and bay leaf. Heat to a boil. Boil until beans are tender, stirring occasionally, about 50 to 60 minutes. Stir in ketchup, brown sugar, mustard, chili powder, worcestershire, paprika, tabasco and thyme. Reduce heat and simmer until beans are very tender, about 30 minutes. Season with salt and pepper.
Serves 6 to 8.
