Ingredients (view qty in metric system instead)
1 pound fresh whole mushrooms, rinsed, stem ends trimmed 2 tbsp. vegetable oil 1 tbsp. lemon juice 3 tbsp. sugar 1/2 tsp. salt 1/4 cup white vinegar 2 tbsp. water
Directions
Cut large mushrooms in half or quarters, leave small mushrooms whole. Heat oil in a large skillet over medium-high heat. Add mushrooms and cook 3 to 4 minutes until softened, stirring frequently. Transfer mushrooms to a medium bowl and sprinkle with lemon juice. Combine sugar, salt, vinegar and water in the same skillet. Heat to a boil. Pour vinegar mixture over mushrooms and toss to coat. Cover and refrigerate until cold.
Makes about 2 cups mushrooms.
