Ingredients (view qty in metric system instead)
3 large onions, peeled, halved and thinly sliced 2 tbsp. olive oil 4 tbsp. butter 1 1/2 pounds beef or calves liver, sliced 1/2 inch thick 2 cups all purpose flour 1 tsp. salt 1 tsp. pepper 2 tbsp. sugar 1/2 cup chicken broth 1/4 cup fresh lemon juice
Directions
Heat oil with 2 tbsp. butter in a large skillet. Add onions and cook, stirring, until golden. Transfer to a platter and keep warm. Sift the flour into a large pie pan. Stir in salt and pepper. Dredge liver slices in flour mixture to coat. In a separate large skillet melt remaining 2 tbsp. butter. Add liver and cook about 5 minutes until browned on the outside but pink in the middle. Transfer to platter with the onions and keep warm. Pour off all but 1 tbsp. fat from skillet. Add sugar, broth and lemon juice. Boil until slightly thickened, Pour over liver and onions and serve.
Serves 4 to 6.
