Ingredients (view qty in metric system instead)
6 medium cucumbers, peeled 1 tsp. salt 1 cup white vinegar 1/4 cup sugar 2 tsp. rice wine
Directions
Halve cucumbers lengthwise and seed. Cut into 1/8 inch thick slices. Sprinkle with salt and refrigerate. Stir together vinegar, sugar and wine in a small saucepan and bring to a boil. Cool to room temperature. Refrigerate until cold. Add cucumbers and toss gently. Cover and refrigerate 8 hours or overnight.
Serves 6 to 8.
