Ingredients (view qty in metric system instead)
1 1/2 pounds beets 1/4 cup + 1 tbsp. vegetable oil 1/4 cup frozen orange juice concentrate 1/4 cup cider vinegar 1 tbsp. dijon mustard 1 tbsp. soy sauce 3/4 tsp. salt 1/4 tsp. pepper
Directions
Bring beets to boil in a large saucepan with water to cover. Simmer until beets are tender. Cool, peel and slice thickly. Stir together oil, orange juice concentrate, vinegar, mustard, soy sauce, salt and pepper in a small saucepan. Bring to a boil. Pour over beets and toss gently. Serve beets warm or cold.
Serves 6 to 8.
