Ingredients (view qty in metric system instead)
1 3/4 cups all purpose flour 1/2 cup sugar 1 tbsp. baking powder 1/2 tsp. salt 2 large eggs 2/3 cup milk 1/3 cup melted butter 1 tsp. finely grated lemon peel 1/2 cup raspberry or strawberry jam
Directions
Preheat oven to 400 degrees. Grease a 12 cup muffin tin or line with paper muffin liners. Combine flour, sugar, baking powder and salt in a large bowl. Whisk eggs in a small bowl until blended. Whisk in milk, melted butter and lemon peel. Pour egg mixture into dry ingredients and stir just until evenly moistened. Divide half the batter between muffin cups. Make a well in the center of each and spoon in some of the jam. Cover jam with the remaining muffin batter. Bake muffins about 20 to 25 minutes until golden. Serve warm or at room temperature.
Makes 1 dozen muffins.
