Ingredients (view qty in metric system instead)
1 1/2 cups brown sugar 2/3 cup vegetable oil 1 cup buttermilk 1 large egg 1 tsp. vanilla extract 1 tsp. baking soda 1 tsp. salt 2 1/2 cups all purpose flour 1 1/2 cups chopped fresh rhubarb 1/2 cup chopped pecans or walnuts 1/2 cup sugar 1 1/2 tbsp. finely grated orange peel 1 tbsp. butter, room temperature
Directions
Preheat oven to 350 degrees. Grease two 9x5 inch loaf pans. Line the bottom of each pan with wax paper. Beat together brown sugar and oil in a large bowl. Beat in buttermilk, egg, vanilla, baking soda and salt. Fold in flour, rhubarb and nuts. Divide batter between the prepared pans. Stir together sugar, orange peel and butter with a fork in a small bowl. Sprinkle mixture over batter. Bake about 1 hour until a toothpick comes out clean. Cool loaves in pans 10 minutes. Turn bread out onto racks, discard wax paper and cool loaves completely.
Makes 2 loaves.
