Ingredients (view qty in metric system instead)
3 tbsp. butter 2 large carrots, peeled and diced 1 1/2 cups chopped onion 1 1/2 tsp. minced garlic 1 quart chicken broth 1/3 cup dry white wine 1 pound sweet potatoes, peeled and cut into 1/2 inch cubes pinch ground white pepper pinch cayenne pepper
Directions
Cook onions and carrots with butter 10 minutes. Add garlic and cook 1 minute. Add broth, wine and sweet potatoes and bring to a boil. Cover and simmer 25 to 30 minutes until vegetables are tender. Strain, reserving solids and broth separately. Put solids in a food processor with 1/2 cup broth and puree until smooth. Stir into reserved broth and add white and cayenne peppers. Simmer 5 minutes.
Serves 4.
