Ingredients (view qty in metric system instead)
2 cups vegetable broth 10 ounces dry couscous 2 tbsp. melted butter 2 tbsp. orange juice 1 tsp. fine grated orange peel 1/4 tsp. ground cinnamon 1/2 cup chopped, pitted dates 1/2 cup raisins 1/2 tsp. salt 1/2 tsp. pepper
Directions
Bring broth to simmer and add couscous. Cover and let stand until couscous is tender and liquid is absorbed, approx. 10 minutes. Mix in butter, orange juice, peel, cinnamon, fruit, salt and pepper.
Serves 4 to 6.
