Ingredients (view qty in metric system instead)
2 tbsp. vegetable oil 2 cups chopped mushrooms 1 medium onion, peeled and chopped 1 large green bell pepper, cored, seeded and chopped 8 large cloves garlic, peeled and chopped 1 1/2 tbsp. Cajun seasoning 1 1/2 tsp. crushed red pepper flakes 28 ounce can crushed tomatoes with juices 14 1/2 ounce can Cajun style stewed tomatoes 1 pound raw medium shrimp, peeled and deveined
Directions
Heat oil in a large skillet over medium heat. Add mushrooms, onion, bell pepper and garlic. Cook about 5 minutes, stirring frequently, until vegetables are crisp tender. Add Cajun seasoning and pepper flakes and cook, stirring, 1 minute. Stir in crushed and stewed tomatoes with juices and bring to a simmer. Simmer about 15 minutes until sauce is thickened, stirring occasionally. Add shrimp and simmer about 5 minutes until just cooked through. Serve hot over rice if desired.
Serves 4.
