Ingredients (view qty in metric system instead)
1 cup butter, diced 8 ounces chopped unsweetened chocolate 3 1/4 cups brown sugar 5 large eggs 2 tbsp. instant coffee powder 1 tbsp. vanilla extract 1 tsp. almond extract 1/4 tsp. salt 1 2/3 cup all purpose flour 2 cups toasted, chopped pecans
Directions
Preheat oven to 425 degrees. Line the inside of a 9x13 inch baking pan with foil. Butter foil. Combine butter and chocolate in a medium saucepan over low heat. Stir until chocolate is melted and smooth. Remove the pan from the heat and cool chocolate to lukewarm. Beat together sugar, eggs, coffee powder, vanilla and almond extracts and salt about 5 minutes until thick and fluffy. Beat in melted chocolate. Stir in flour and pecans. Transfer batter to the prepared pan. Bake brownies about 25 minutes until set and a toothpick comes out clean. Transfer pan to a rack and cool brownies completely. Lift the brownies out of the pan, using foil as an aid. Peel off foil and cut brownies into squares.
Makes about 2 dozen brownies.
