Ingredients (view qty in metric system instead)
1 cup lager beer 1 1/2 tbsp. dry yeast 1/2 tsp. salt 3 1/2 cups all purpose flour 1/4 cup plus 2 tbsp. olive oil, divided 8 ounces ground Italian sausage 1 cup shredded Mozzarella cheese 3/4 cup grated Parmesan cheese 1 1/2 tbsp. dried basil 2 cloves prepared roasted garlic, mashed 1/2 tsp. pepper
Directions
Place beer in a small saucepan and warm to 110 to 115 degrees over low heat. Transfer the warmed beer to a large bowl. Stir in yeast and salt. Stir in 1/2 cup flour and 1/4 cup olive oil. Add the remaining 3 cups flour and knead until dough forms a smooth, nonsticky, ball, add more flour by tablespoonfuls if necessary. Cover and refrigerate dough overnight.
Grease a large sheet pan. Remove dough from the refrigerator and punch down. Transfer the dough to the prepared pan and press into a 12x9 inch rectangle. Preheat oven to 425 degrees. Place ground sausage in a medium skillet over medium high heat. Brown sausage well, breaking up clumps. Drain sausage and sprinkle evenly over the dough, leaving a 1 inch margin all around. Sprinkle the Mozzarella, Parmesan, basil, garlic and pepper over the sausage. Roll up dough jelly roll style. Brush dough with the remaining 2 tbsp. olive oil. Bake bread about 10 to 15 minutes until golden brown. Slice bread and serve hot.
Serves 4 to 6.
