Sunday Brunch French Toast and Fruit Sandwiches

Ingredients (view qty in metric system instead)
8 ounces cream cheese, room temperature 1/2 cup chopped walnuts 2 tsp. vanilla extract, divided 16 slices firm white bread 1 cup half and half 3 large eggs pinch ground nutmeg 2 tbsp. butter 2 tbsp. vegetable oil 2 bananas, peeled and sliced 1 pint fresh strawberries, stemmed and sliced mandarin orange segments
Directions
Stir together cream cheese, walnuts and 1 tsp. vanilla in a small bowl until well blended. Spread the cream cheese mixture over 1 side of 8 slices bread. Top with 8 remaining bread slices to form 8 sandwiches. Whisk together half and half, eggs, nutmeg and remaining 1 tsp. vanilla in a medium bowl. Melt together butter and oil in a large skillet over medium heat. Working in batches, dip each sandwich into the egg mixture to coat. Transfer sandwiches to the skillet and cook about 3 minutes per side until golden brown. Cut cooked sandwiches into quarters and divide between 8 plates. Toss together bananas, strawberries and mandarin orange segments in a medium bowl. Spoon the fruit mixture over the sandwiches and serve.
Serves 8.
