Sunday Brunch Easy Blueberry Croissant French Toast

Ingredients (view qty in metric system instead)
2 large eggs 2 cups half and half 1 1/2 tsp. vanilla extract 1 1/2 tsp. ground cinnamon 1 tbsp. sugar 4 large, day old croissants, sliced in half horizontally 1 1/2 cups fresh blueberries
Directions
Whisk together eggs, half and half, vanilla, cinnamon and sugar in a large bowl. Add croissant halves and submerge in the batter. Let croissants soak 10 minutes.
Preheat griddle to 350 degrees. Coat griddle with cooking spray. Place soaked croissant halves on the prepared griddle and cook until golden brown on both sides. Divide croissants between 4 plates, sprinkle with blueberries and serve.
Serves 4.
