Ingredients (view qty in metric system instead)
Filling: 4 pints strawberries, stemmed and quartered 2 pints blackberries 2 pints raspberries 3/4 cup sugar 2 tbsp. cornstarch
Cake: 1 1/2 cups all purpose flour 1 cup sugar 2 tsp. finely grated lemon peel 1 1/2 tsp. baking powder 1/2 tsp. salt 2 large eggs 1/2 cup milk 1 tsp. vanilla extract 3/4 cup butter, melted
Directions
For Filling: Coat the inside of a 9x13 inch baking dish with cooking spray. Combine the strawberries, blackberries, raspberries, sugar and cornstarch in a large bowl and toss to coat. Let the filling stand 10 minutes. Spread the berry mixture evenly into the bottom of the prepared dish.
For Cake: Preheat oven to 375 degrees. Stir together the flour, sugar, lemon peel, baking powder and salt in a medium bowl. Add the eggs, milk and vanilla and whisk until evenly moistened. Add the melted butter and whisk until a smooth batter forms. Spoon the batter over the filling. Bake about 1 hour until a toothpick comes out clean and the filling is bubbly. Transfer the dish to a rack and let cool about 1 hour before serving.
Serves 6 to 8.
