Ingredients (view qty in metric system instead)
1 pound beef top loin steak, cut 1 1/2 to 2 inches thick 2 tbsp. chopped onion 2 tbsp. chopped fresh mushrooms 2 tsp. butter or margarine 1/2 cup diced cooked ham 2 tsp. dry breadcrumbs 2 tsp. minced fresh parsley 2 tsp. vegetable oil 1/8 tsp. pepper 1 slice swiss cheese
Directions
Cut a deep slit horizontally in steak to form a pocket and set aside. Heat butter or margarine in a large skillet. Add onion and mushrooms and cook until tender but not brown, about 5 minutes. Stir in ham, breadcrumbs, parsley, oil and pepper. Cook, stirring, 2 minutes. Fold cheese slice in half and place in meat pocket. Spoon stuffing into pocket and close with skewers or toothpicks. Place steak on a broiler pan and broil 3 to 4 inches from heat to desired doneness, turning once.
Serves 2 to 3.
