Ingredients (view qty in metric system instead)
Stuffing: 1 cup chopped mushrooms 3 tbsp. minced onion 2 tbsp. minced celery 1 tbsp. minced garlic 3 tbsp. chopped fresh parsley 3 tbsp. butter 1/2 pound lump crab meat, picked over and chopped 1/2 cup chicken broth 32 Ritz crackers, crushed into crumbs
Shrimp: 18 jumbo shrimp, shelled, tails left intact and deveined 2 tbsp. butter 1/4 tsp. paprika
Directions
For Stuffing: Cook mushrooms, onion, celery, garlic and parsley with butter in a large skillet until tender and liquid is evaporated. Stir in crab meat and cook, stirring, 3 minutes. Stir in broth and cracker crumbs. Remove pan from heat.
For Shrimp: Preheat oven to 375 degrees. Butter a large baking dish. Mound about 2 tbsp. stuffing onto each shrimp, pressing down lightly. Place shrimp stuffed-side up in prepared dish. Drizzle melted butter over shrimp and sprinkle with paprika. Bake about 20 minutes until stuffing is golden.
Makes 18 pieces.
