Ingredients (view qty in metric system instead)
1 1/2 cups packaged bread stuffing mix 3 ounce can sliced mushrooms with juices 2 tbsp. butter 1 ounce grated parmesan cheese 1 to 1 1/2 pounds flank steak, scored with a knife on both sides 2 tbsp. vegetable oil 1/4 cup dry red wine 2 tbsp. minced green onion 1 envelope dry brown gravy mix 1/4 cup jellied cranberry sauce
Directions
Preheat oven to 350 degrees. Stir together stuffing, mushrooms with juices, butter and parmesan in a medium bowl. Spread evenly over 1 side of flank steak and roll up jelly roll style. Tie with string to secure. Pour oil into a 6 quart dutch oven or medium roasting pan. Add meat and turn to coat. Stir together wine, onion and gravy mix to form a paste. Spread over meat. Cover and bake until meat is tender, about 1 1/2 to 2 hours. Transfer meat to a platter and tent with foil. Add cranberry sauce to baking pan and stir over medium heat until well blended. Pour over meat and serve.
Serves 4.
