Ingredients (view qty in metric system instead)
3 cups raisins 2 cups brandy 2 pounds Granny Smith apples, cored and quartered 5 cups sugar, divided 1 cup water 3/4 cup pureed strawberries 3 large eggs, beaten to blend 2 tbsp. lemon juice 1 tsp. vanilla extract 4 cups cake flour 3 tbsp. butter, melted 1 tbsp. baking soda 1 tbsp. salt 1 tbsp. ground cinnamon 1 1/2 tsp. ground cloves
Directions
Combine raisins and brandy in a medium saucepan and heat to a simmer, stirring occasionally. Remove the pan from the heat and cool raisins completely. Drain raisins. Combine quartered apples, 2 cups sugar and water in a large saucepan over medium heat. Simmer apples until tender, stirring occasionally. Transfer the apple mixture to a food processor and puree. Transfer the apple puree to a large bowl and add raisins, strawberry puree, eggs, lemon juice, vanilla, cake flour, butter, baking soda, salt, cinnamon, remaining 3 cups sugar and cloves. Mix until well blended. Preheat oven to 350 degrees. Grease and flour the inside of three 5x9 inch loaf pans. Divide the batter between the prepared pans. Bake about 1 hour until a toothpick comes out clean. Transfer pand to a rack and cool loaves completely before serving.
Makes 3 loaves.
