Ingredients (view qty in metric system instead)
2 tbsp. butter 1 cup Arborio rice 2 tbsp. finely grated orange peel 1 tsp. vanilla extract 3 cups milk 1/2 cup sugar 2 cups whipped cream
Directions
Melt butter in a large saucepan over medium heat. Add rice, orange peel and vanilla. Cook, stirring, 2 minutes. Reduce heat to low and add milk. Cook, stirring frequently, about 30 minutes until milk is absorbed and rice is tender. Stir in sugar and transfer to a shallow baking dish. Refrigerate until pudding is cooled. Fold 1/4 of the whipped cream into the pudding to lighten. Fold in remaining whipped cream. Serve chilled or at room temperature.
Serves 6 to 8.
