Ingredients (view qty in metric system instead)
Pudding: 3/4 cup plus 2 tbsp. butter, diced 3/4 cup plus 2 tbsp. sugar 3 large eggs 1 1/2 cups all purpose flour 1 1/2 tsp. vanilla extract 3/4 tsp. baking powder 2/3 cup water 1/3 cup milk 1 1/3 cups pitted, chopped dates
Sauce: 2 1/4 cups dark brown sugar 1/4 cup butter 1 1/2 cups heavy or whipping cream 1 1/2 tsp. vanilla extract 1/2 cup chopped toasted pecans
Directions
For Pudding: Preheat oven to 350 degrees. Butter a 9 inch springform pan. Line bottom of pan with a round of wax paper. Butter paper. Combine butter, sugar, eggs, flour, vanilla, baking powder, water and milk in a food processor. Blend until smooth. Add dates and pulse until combined. Pour batter into prepared pan. Bake about 75 minutes until golden and a tester comes out clean. Cool in pan on a rack 10 minutes. Remove pan sides and invert pudding onto a large ovenproof plate.
For Sauce: Combine sugar, butter, cream, vanilla and pecans in a large saucepan. Heat to a boil, stirring occasionally. Reduce heat and simmer sauce 5 minutes.
To Serve: Preheat oven to 275 degrees. Meanwhile, pour 1 1/2 cups sauce over pudding. Let stand 15 minutes. Bake pudding until heated through, about 10 to 15 minutes. Serve pudding warm with remaining sauce.
Serves 8 to 10.
