Ingredients (view qty in metric system instead)
3/4 cup long grain rice 1/4 cup chicken or vegetable broth 1 tsp. mashed garlic 1/2 tsp. salt 1 tbsp. peeled, grated fresh ginger 1/4 cup finely chopped green onions 2 tsp. fresh lemon juice 1 tsp. soy sauce 1/2 cup finely chopped cilantro
Directions
Heat a large saucepan of lightly salted water to a boil. Add rice and return to a boil. Cook rice 10 minutes, stirring frequently. Drain rice in a fine strainer and rinse under cold water. Let drain. Add water to saucepan and heat to a boil. Set strainer over top of water and cover with a towel. Place a lid on top of towel. Steam rice about 20 minutes until tender. Stir together broth, garlic, salt, ginger, green onions, lemon juice, soy sauce and cilantro in a large bowl. Stir in steamed rice and toss until well combined. Serve immediately.
Serves 4.
