1/4 cup Dijon mustard 2 pounds round steak, sliced 1/4 inch thick 8 slices bacon 1/4 tsp. salt 1/4 tsp. pepper 1 large onion, peeled and cut into thin wedges 3 tbsp. vegetable oil 3 cups beef broth 1/2 cup water 1/3 cup all purpose flour
Directions
Spread some mustard on each slice of steak. Season steak with salt and pepper. Place 1 strip of bacon and a few onion wedges on each slice of steak. Roll up steak slices and secure with toothpicks. Heat oil in a large skillet over medium-high heat. Add steak rolls and brown. Drain fat from pan. Add broth to skillet and bring to a boil. Reduce heat, cover and simmer 60 to 90 minutes until steak is tender. Remove steak from skillet and keep warm. Stir together flour and water in a small bowl until smooth. Stir into broth and heat to a boil, stirring constantly. Cook until thickened and bubbly. Remove toothpicks from steak rolls. Return steak to skillet and heat through.
