St. Patrick's Day White Chocolate Irish Cream Cheesecake Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
Crust:
10 whole graham crackers, crushed
1 1/4 cups chopped pecans
1/4 cup sugar
6 tbsp. butter, melted

Filling:
24 ounces cream cheese, room temperature
3/4 cup sugar
3 large eggs
1/3 cup Irish cream liqueur
1 tsp. vanilla extract
3 ounces finely chopped white chocolate

Topping:
1 1/2 cups sour cream
1/4 cup powdered sugar


Directions
For Crust:
Wrap the outside of a 9 inch springform pan tightly with foil. Combine graham crackers, pecans and sugar in a food processor and grind finely. Press the crumbs evenly into the bottom of the prepared pan. Refrigerate crust while preparing filling.

For Filling:
Preheat oven to 325 degrees. Combine cream cheese and sugar in a large bowl and beat until smooth. Whisk together eggs, Irish cream and vanilla in a small bowl. Beat the Irish cream mixture into the cream cheese. Stir in the white chocolate. Spread the filling evenly over the prepared crust. Place the cheesecake in a large roasting pan. Add enough hot water to the roasting pan to come halfway up the side of the springform. Bake cheesecake about 50 minutes until just set and slightly puffed. Transfer cheesecake to a rack and cool completely.

For Topping:
Stir together sour cream and powdered sugar in a medium bowl. Spread the topping evenly over the cooled cheesecake. Refrigerate cheesecake at least 6 hours.

Run a sharp knife around the inside edges of the springform pan. Loosen pan sides and remove. Slice cheesecake with a warm knife and serve.

Serves 10 to 12.
