Ingredients (view qty in metric system instead)
1/2 cup chopped onion 1/2 cup chopped green bell pepper 2 tbsp. butter or margarine 2 cups cooked mashed winter squash 17 ounce can cream-style corn 1 cup + 2 tbsp. coarsely crushed saltine crackers 1/2 cup shredded cheddar cheese 2 tbsp. chopped pimiento 1 tsp. melted butter
Directions
Preheat oven to 350 degrees. Heat 2 tbsp. butter or margarine in a medium saucepan. Add onion and bell pepper and cook until tender but not browned, about 3 to 5 minutes. Stir in squash, corn, 1 cup crackers, cheddar and pimiento. Spoon into 6 to 8 greased individual casserole dishes. Stir together 2 tbsp. crackers and 1 tsp. melted butter and sprinkle over casseroles. Bake, uncovered, 30 minutes.
Serves 6 to 8.
