Ingredients (view qty in metric system instead)
1 pound bacon 1 cup mayonnaise 1/2 cup grated onion 1/4 cup vegetable oil 1/4 cup red wine vinegar 3 tbsp. sugar 1 tbsp. dijon mustard 1/2 tsp. salt 1/2 tsp. pepper 2 pounds spinach, stemmed and torn 1 1/2 pounds sliced mushrooms 6 hard boiled eggs, sliced 1/2 cup grated parmesan
Directions
Cook bacon until crisp. Reserve 3 tbsp. drippings. Drain on paper towels and crumble. Stir together mayonnaise, onion, oil, vinegar, sugar and dijon. Stir in bacon drippings, salt and pepper. Toss together spinach, mushrooms, eggs and dressing. Sprinkle with cheese and crumbled bacon.
Serves 12.
