Ingredients (view qty in metric system instead)
5 Tbsp. olive oil 6 ounce bag baby spinach leaves 1 cup crumbled feta cheese 3/4 cup sour cream 1 Tsp. minced garlic 1/2 Tsp. grated lemon peel salt and pepper to taste
Directions
Heat 1 Tbsp. oil in a large skillet. Add spinach and cook until wilted, stirring, approx. 1 to 2 minutes. Transfer spinach to fine mesh strainer and press out excess liquid. Chop. Combine 4 Tbsp. oil, feta, sour cream, garlic and lemon peel in food processor and blend until smooth. Stir in spinach, salt and pepper. Serve with crackers, breadsticks, vegetables, etc.
Makes approx. 1 1/2 cups
