Ingredients (view qty in metric system instead)
3 tbsp. soy sauce 2 tbsp. rice wine vinegar 1 tbsp. honey 1 tbsp. corn starch 2 tsp. sesame oil 4 tsp. vegetable oil, divided 1 pound large, raw shrimp, peeled and deveined 4 large cloves garlic, peeled and minced 1 1/2 tbsp. peeled, minced fresh ginger 1/4 tsp. crushed red pepper flakes 1 large red bell pepper, cored, seeded and sliced into strips 1 1/2 cups fresh or canned pineapple cubes 6 green onions, sliced hot, cooked rice
Directions
Stir together soy sauce, rice wine vinegar, honey, corn starch and sesame oil in a small bowl. Heat 2 tsp. vegetable oil in a large skillet over medium high heat. Add shrimp, garlic, ginger and crushed pepper flakes. Cook 2 minutes, stirring frequently. Transfer shrimp mixture to a bowl. Add remaining 2 tsp. vegetable oil to the skillet. Add bell pepper and cook, stirring, 2 minutes. Add pineapple cubes, green onions and shrimp mixture to skillet. Cook, stirring, 2 minutes until shrimp are just done. Stir in soy sauce mixture. Cook, stirring, 1 minute until sauce is thickened. Serve immediately over hot, cooked rice if desired.
Serves 4.
