Ingredients (view qty in metric system instead)
3 soft white bread slices, cubed 3 tbsp. chopped fresh cilantro leaves 4 tbsp. yellow cornmeal 2 large cloves fresh garlic, peeled and chopped 1 1/2 tsp. ground cumin 1/2 tsp. dried oregano 1/2 tsp. salt 1/4 tsp. cayenne pepper pinch ground cloves 2 tsp. egg white, beaten to blend 2 tbsp. Dijon mustard 1 tbsp. water 2 tsp. honey 4 chicken thighs 4 chicken drumsticks
Directions
Preheat oven to 400 degrees. Grease a large baking pan. Combine bread cubes, cilantro, cornmeal, garlic, cumin, oregano, salt, cayenne and cloves in a food processor. Process mixture to fine crumbs. Add egg white and blend until crumbs are evenly moistened. Transfer crumbs to a pie plate. Stir together Dijon, water and honey in a small bowl. Brush Dijon mixture all over chicken pieces. Coat chicken pieces with the crumb mixture, pressing lightly to adhere. Place coated chicken on the prepared pan. Bake chicken about 40 minutes until crisp and browned. Serve immediately.
Serves 4.
