Ingredients (view qty in metric system instead)
1 cup teriyaki sauce 3/4 cup chunky peanut butter 1/2 cup water 1 tbsp. sugar 8 slices peeled fresh ginger 1 tsp. dried red pepper flakes 6 boneless skinless chicken breast halves
Directions
Combine teriyaki, peanut butter, water, sugar, ginger and red pepper flakes in the top of a double boiler over simmering water. Stir until smooth. Cook until very thick, stirring frequently, about 20 minutes. Cool to room temperature. Discard ginger. Place chicken breast halves in a large baking dish. Brush sauce thickly over both sides of chicken. Cover and let stand 30 minutes at room temperature. Preheat oven to 350 degrees. Spoon any remaining sauce over chicken. Bake about 20 minutes until cooked through. Serve immediately.
Serves 6.
