Ingredients (view qty in metric system instead)
1 pound ground, lean hot sausage 1 pound grated Cheddar cheese 1 1/4 pounds grated Monterey Jack cheese three 4 ounce cans sliced green chilies, drained 9 large eggs, beaten to blend 1 cup milk 2 tbsp. all purpose flour
Directions
Preheat oven to 350 degrees. Lightly coat the inside of a 9x13 inch glass baking dish with cooking spray. Brown sausage in a large skillet, breaking up clumps. Drain sausage well. Sprinkle half of the sausage over the prepared dish. Layer with half the Cheddar, half the Monterey Jack and half of the chilies. Repeat layering. Combine the eggs, milk and flour in a blender. Process egg mixture until smooth and pour over casserole. Sprinkle top of casserole with paprika. Bake 40 to 45 minutes until casserole is set. Let stand 5 minutes before slicing and serving.
Serves about 8 to 12.
