Ingredients (view qty in metric system instead)
1 cup dry breadcrumbs 2 tsp. ground cumin 2 tsp. dry oregano 1 1/2 tsp. salt 1 tsp. chili powder 1/4 tsp. cayenne pepper 1/2 tsp. black pepper 3 large eggs 4 tbsp. lime juice 12 chicken legs, skinned 1 cup all purpose flour 2 tbsp. butter 4 tbsp. vegetable oil
Directions
Preheat oven to 350 degrees. Mix together crumbs, cumin, oregano, salt, chili powder, cayenne and black pepper in a bowl. Beat eggs with lime juice to blend. Roll chicken in flour to coat. Dip in egg mixture to coat then coat with breadcrumb mixture. Melt butter with oil in skillet and brown chicken legs on all sides. Place in baking pan and bake about 30 minutes or until cooked through.
Serves 4 to 6.
