Ingredients   (view qty in metric system instead)
3 tbsp. vegetable oil
2 cups chopped green onions, divided
1 1/2 cups diced cooked ham
1 cup chopped green bell pepper
3 cups frozen hash brown potatoes, thawed
1 1/2 tsp. dried thyme
3/4 tsp. cajun seasoning

Directions
Heat oil in a large skillet. Add 1 1/2 cups green onion, ham and bell pepper. Cook until vegetables are crisp-tender, about 3 minutes. Stir in potatoes, thyme and cajun seasoning. Reduce heat to low. Cover and cook 8 minutes. Uncover and cook an additional 8 minutes until potatoes are tender and crusty, adding more oil if necessary. Stir in remaining 1/2 cup green onions.

Serves 2.
