Ingredients (view qty in metric system instead)
6 ounce can tomato paste 3 tbsp. chopped canned chipotle chilies 1 tbsp. light molasses 12 thick slices sourdough or other bread 18 ounces thinly sliced extra sharp cheddar cheese 4 medium tomatoes, sliced 1/4 inch thick 1 small red onion, peeled and thinly sliced 1 cup chopped fresh cilantro leaves 6 tbsp. butter, room temperature
Directions
Blend tomato paste, chipotles and molasses in a food processor or blender until smooth. Spread 1 tbsp. chipotle mixture over 1 side of each bread slice. Top 6 coated bread slices with half of cheese. Place tomato slices, onion slices and cilantro over cheese. Top with remaining cheese and coated bread slices. Butter outside tops and bottoms of sandwiches. Toast sandwiches on a griddle or in a large skillet until bread is golden and cheese is melted, about 5 minutes per side. Serve immediately.
Makes 6 sandwiches.
