Ingredients (view qty in metric system instead)
4 large tomatoes 3 cups canned hot and spicy vegetable juice 2 cups peeled, seeded, chopped cucumber 1 1/2 cups chopped green bell pepper 1 cup chopped onion 1/4 cup olive oil 1/4 cup red wine vinegar 2 tbsp. lemon juice 2 tbsp. worcestershire sauce chopped parsley for garnish
Directions
blanch tomatoes 15 seconds in boiling water. Drain, cool. Peel, seed and chop. Add veg. juice, cucumber, bell pepper, onion, oil, vinegar, lemon and worcestershire. Coarsely puree in blender. Season with salt and pepper if needed. Chill until cold. Garnish with parsley before serving.
Makes approximately 8 cups.
