Ingredients (view qty in metric system instead)
4 boneless skinless chicken breast halves 1 cup buttermilk 1 tsp. tabasco sauce 1 tsp. salt, divided 1/2 tsp. pepper 3 cups soft breadcrumbs 1/2 tsp. cayenne pepper 1 cup vegetable oil
Directions
Pound chicken breasts out to 1/3 inch thick. Whisk together buttermilk, tabasco, 1/2 tsp. salt and pepper in a shallow dish. Add chicken, turn to coat, and let stand 15 minutes. Stir together bread crumbs, cayenne and remaining 1/2 tsp. salt in another shallow dish. One piece at a time, dredge chicken in breadcrumb mixture to coat, pressing gently to adhere. Heat oil in a large skillet. Fry chicken in 2 batches until golden brown and cooked through, about 3 minutes per side. Drain on paper towels. Serve immediately with additional tabasco sauce on the side.
Serves 4.
