Ingredients (view qty in metric system instead)
3/4 tsp. kosher salt 1/8 tsp. cayenne pepper 1/8 tsp. paprika 1/8 tsp. ground coriander 4 cups vegetable oil 2 medium russet potatoes
Directions
Stir together salt, cayenne, paprika and coriander in a large bowl. Heat oil in a deep pot to 325 degrees. Meanwhile, cut potatoes lengthwise into 1/4 inch thick fries. Add potatoes to oil and fry 90 seconds. Transfer fries to paper towels with a slotted spoon. Increase heat on oil until it reaches 350 degrees. Return potatoes to oil. Fry about 5 minutes until crisp and golden. Drain fries on paper towels. Transfer to bowl with spice mixture and toss to coat. Serve immediately.
Serves 2.
