1 tbsp. vegetable oil 1/2 cup peeled, chopped onion 1/2 cup chopped celery 1/4 cup chopped green bell pepper 12 ounce bottle chili sauce 1 1/2 pounds ground beef 1 cup soft, fresh breadcrumbs 1 large egg, beaten to blend 2 tbsp. Worcestershire sauce 1/2 tsp. salt 1/4 tsp. pepper
Directions
Preheat oven to 350 degrees. Lightly coat the inside of a loaf pan with cooking spray. Heat oil in a medium skillet over medium high heat. Add onion, celery and green pepper to the skillet. Cook about 5 to 8 minutes until tender, stirring occasionally. Stir in the chili sauce. Combine the ground beef, breadcrumbs, egg, Worcestershire, salt and pepper in a large bowl. Add 1/2 cup of the chili sauce mixture to the beef. Blend the beef mixture with your hands until well combined. Form the beef mixture into the prepared loaf pan. Spread 1/2 cup of the chili sauce mixture over the top of the meatloaf. Bake meatloaf about 1 hour until cooked through. Remove the meatloaf from the oven and let stand 5 minutes before removing from the pan and slicing. Heat the remaining chili sauce mixture to a simmer. Serve the sliced meatloaf immediately with the warm sauce.
