Ingredients (view qty in metric system instead)
1 1/2 cups all purpose flour 1 cup yellow cornmeal 2 tbsp. sugar 4 tsp. baking powder 3/4 tsp. salt 1/2 tsp. chili powder 1 1/4 cups milk 4 large eggs 6 tbsp. melted butter 2/3 cup fresh or frozen thawed corn kernels 3 tbsp. chopped green onions
Directions
Preheat oven to 350 degrees. Grease an 8x8 inch square baking pan or 12 cup muffin tin. Stir together flour, cornmeal, sugar, baking powder, salt and chili powder in a large bowl. Beat in milk, eggs and butter until just blended. Fold in corn and green onions. Transfer batter to prepared pan or divide among muffin tins. Bake 40 to 50 minutes for square baking pan or 20 to 25 minutes for muffins, until center springs back when pressed. Cool slightly in pan. Cut into squares or turn out muffins onto a plate. Serve warm.
Makes about 12 cornbread squares or muffins.
