Ingredients (view qty in metric system instead)
1/4 cup vegetable oil 1/4 cup all purpose flour 3 to 4 tsp. cajun seasoning 2 1/2 cups bottled clam juice two 14 1/2 ounce cans diced tomatoes with onions 2 tbsp. chopped fresh thyme leaves 1 clove garlic, minced 1 pound lump crab meat 1/4 tsp. salt 1/4 tsp. pepper
Directions
Whisk together oil and flour in a large saucepan. Cook over medium-high heat, stirring, until smooth and golden brown, about 3 minutes. Add cajun seasoning and stir 30 seconds. Stir in clam juice and tomatoes with juices. Simmer 3 minutes. Add thyme and garlic and simmer 1 minute. Add crab, salt and pepper and simmer until heated through. Serve immediately.
Serves 4 to 6.
