Ingredients (view qty in metric system instead)
3 to 4 pound boneless pot roast 1/8 tsp. dried oregano, crumbled 1/8 tsp. dried basil, crumbled 1/8 tsp. dried thyme, crumbled 1/4 tsp. salt 1/4 tsp. pepper 6 slices bacon, cut into 1/4 inch pieces 3 tbsp. vegetable oil 1 cup bourbon
Directions
Preheat oven to 350 degrees. Cut deep slits all over roast with a sharp knife. Stir together bacon, oregano, basil, thyme, salt and pepper in a small bowl. Push bacon mixture into slits in roast. Heat oil in a large skillet. Add roast and brown on all sides. Transfer roast to a large glass casserole dish. Pour bourbon over. Roast 2 hours, basting occasionally, until roast is tender and cooked through. Remove roast from oven and tent with foil. Let stand 15 minutes before slicing.
Serves 6 to 8.
