Ingredients (view qty in metric system instead)
2 cups ketchup 1/2 cup cider vinegar 1/2 cup water 2 tbsp. lemon juice 2 tbsp. Worcestershire sauce 2 tbsp. Tabasco sauce 2 tbsp. molasses 2 tbsp. Dijon mustard 2 tbsp. chili powder 1/4 cup dark brown sugar 2 tsp. minced garlic 1 tsp. paprika 1 tsp. liquid smoke 1/2 tsp. salt 1/2 tsp. pepper 30 chicken wings, wing tips removed 4 green onions, sliced
Directions
Combine the ketchup, cider vinegar, water, lemon juice, Worcestershire, Tabasco, molasses, Dijon, chili powder, brown sugar, garlic, paprika, liquid smoke, salt and pepper in a medium saucepan. Cook 10 to 12 minutes over medium low heat, stirring frequently-Don't boil. Remove the pan from the heat and strain the sauce into a medium bowl. Cool sauce to room temperature.
Preheat oven to 350 degrees. Cut each chicken wing at the joint to make 2 pieces. Transfer chicken pieces to a large bowl. Pour 1 1/2 cups of the sauce over the chicken wings and toss to coat. Transfer the coated chicken wings to sheet pans and arrange in a single layer. Bake wings 45 to 50 minutes, basting every 20 minutes with the remaining sauce. Transfer the cooked chicken wings to a platter and sprinkle with green onions. Serve immediately.
Makes about 60 pieces.
