Ingredients (view qty in metric system instead)
2 pounds ground beef 1.25 ounce package dry taco seasoning mix 1/2 cup dry bread crumbs 1 small onion, peeled and chopped 2 large egg whites, beaten to blend 1/3 cup ketchup 10 ounce can diced tomatoes with chilies, drained
Directions
Preheat oven to 425 degrees. Line the inside of a 13x9 inch baking pan with foil. Mix together the ground beef, taco seasoning, bread crumbs, onion, egg whites and ketchup in a large bowl. Form the mixture into a 10x6 inch loaf. Place the meatloaf into the prepared pan. Spoon the diced tomatoes and chilies over the loaf. Bake about 45 to 60 minutes until temperature reaches 160 degrees. Drain off the pan juices. Cover meatloaf with foil. Let stand 10 minutes before slicing and serving.
Serves 6 to 8.
