Ingredients (view qty in metric system instead)
2 pounds watermelon rind, cut into 1 inch cubes 18 cups water, used in 3 different measurements 1/2 cup salt 4 cups sugar 1 lemon, thinly sliced 1 tbsp. whole cloves 1 tbsp. whole allspice berries 2 cinnamon sticks 2 cups white vinegar
Directions
Stir together 8 cups water and salt in a large bowl. Add cubed watermelon rind. Cover and let stand overnight. Drain rind well and transfer to a large pot. Add 8 cups water and heat to a boil. Reduce heat and simmer 10 minutes until watermelon is crisp-tender. Drain. To same pot, add sugar, lemon slices, cloves, allspice, cinnamon sticks, vinegar and 2 cups water. Heat to a boil. Stir in watermelon rind. Simmer, stirring frequently, about 1 hour until rind is clear and syrup is thick. Ladle pickles into hot sterilized jars. Fill with hot syrup. Seal and store in a cool, dry place.
Makes about 2 pounds pickles.
