Ingredients (view qty in metric system instead)
1 cup dried figs, stemmed 1 cup dried apricots 1 cup dried pitted prunes 1 tbsp. whole allspice berries, cracked 1 tbsp. cracked mixed peppercorns 1/4 cup melted butter 12 pound goose, wing tips removed 2 medium onions, peeled and quartered 2 tsp. salt
Directions
Combine figs, apricots and prunes in a large saucepan. Add water to cover and heat to a simmer. Cover and simmer 20 minutes. Drain fruit. Preheat oven to 425 degrees. Stir together allspice, peppercorns and butter in a small bowl. Discard neck and giblets from goose. Prick skin all over with a skewer. Fold neck skin under body and fasten with a skewer. Season goose inside and out with salt. Stuff cavity with onions and dried fruits. Tie together legs with string. Rub skin all over with butter mixture. Place goose on a rack in a large roasting pan. Roast 30 minutes. Reduce oven to 325 degrees. Roast goose 2 hours, basting every 30 minutes until a thermometer registers 165 to 170 degrees(juices may still be lightly pink). Transfer goose to a platter and tent with foil. Let stand 30 minutes before serving. Remove onions and fruit from body cavity and serve with goose.
Serves 8 to 10.
