Ingredients (view qty in metric system instead)
3/4 cup olive oil 3 tbsp. chopped fresh garlic 4 tsp. ground cumin 1 1/2 tsp. cayenne pepper 1 1/2 tsp. ground cinnamon 3 pounds boneless pork tenderloin 1/2 tsp. salt 1/2 tsp. pepper
Directions
Stir together olive oil, garlic, cumin, cayenne and cinnamon in a small bowl. Place the pork in a baking dish and rub all over with the spice mixture. Cover and refrigerate pork at least 4 hours.
Preheat oven to 400 degrees. Season pork with salt and pepper and transfer to a large skillet. Brown pork on all sides over medium high heat. Transfer pork to a large roasting pan. Roast pork about 15 minutes until temperature reaches 155 degrees. Transfer pork to a cutting board and let stand 5 minutes before slicing and serving.
Serves 6.
