Ingredients (view qty in metric system instead)
2 cups all purpose flour 1/2 cup white rye flour 2 tbsp. baking powder 2 tbsp. sugar 1 tsp. salt 1/2 tsp ground cinnamon 1/2 tsp. ground nutmeg 2 large eggs 2 1/4 cups buttermilk 3 tbsp. plus additional vegetable oil
Directions
Sift together both flours, baking powder, sugar, salt, cinnamon and nutmeg in a large bowl. In a separate bowl, whisk together eggs, buttermilk and 3 tbsp. oil. Whisk in flour mixture until just combined-batter will be thick. Heat 1 tbsp. vegetable oil in a large skillet. Add 1/4 cupfuls of batter to skillet and form into pancakes. Cook about 2 minutes until bottom of pancakes are golden. Flip pancakes and continue cooking until bottom is golden brown and pancakes are cooked through. Repeat cooking with additional oil and remaining batter.
Makes about sixteen 3 inch pancakes.
